    Prepare the Ingredients

    Chop the boneless lamb into bite-sized pieces. Finely chop the onion, garlic cloves, and ginger. Slice the green chili. Set all ingredients aside.

    In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and sauté until golden brown, about 5-7 minutes.

    Add Spices

    Stir in the cumin seeds, coriander powder, turmeric powder, and salt. Cook for another 2 minutes until fragrant.

    Cook the Lamb

    Add the chopped boneless lamb to the pot. Cook for about 5-7 minutes, stirring occasionally, until the lamb is browned on all sides.

    Incorporate Coconut Milk

    Pour in the coconut milk and bring the mixture to a gentle simmer. Add the sliced green chili, cover the pot, and let it cook on low heat for about 30 minutes, or until the lamb is tender.

    Finish the Dish

    After 30 minutes, sprinkle garam masala, black pepper, and adjust salt if needed. Stir well and let it simmer for an additional 5 minutes.

    Remove from heat, garnish with freshly chopped cilantro, and serve hot with rice or bread.
