Method

Preparation of Cashew Sauce

    Soak Cashews

    In a bowl, soak the raw cashews in water for at least 2 hours. Drain and set aside.

    Blend the Sauce

    In a blender, combine the soaked cashews, 1.5 cups of water, coconut milk, chopped onion, minced garlic, and grated ginger. Blend until smooth and creamy. Set aside.

Cooking the Beef

    Sear the Beef

    In a large pot or Dutch oven, heat 2 tablespoons of vegetable oil over medium-high heat. Add the beef chunks and sear on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Onions

    In the same pot, add the chopped onions and sauté until translucent, about 3-4 minutes.

    Add Spices

    Add cumin, coriander, turmeric, salt, and black pepper to the sautéed onions. Cook for another 1-2 minutes until fragrant.

Combine and Cook

    Combine Ingredients

    Return the seared beef to the pot and pour in the cashew sauce. Stir well to combine.

    Simmer

    Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 1.5 to 2 hours, or until the beef is tender.

Finishing Touches

    Add Garam Masala

    Once the beef is tender, stir in the garam masala. Cook for an additional 10 minutes.

    Garnish and Serve

    Serve the korma beef hot, garnished with fresh cilantro. It pairs well with rice or naan.
