    Marinate the Goat

    In a large bowl, mix the goat meat with turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cover and let it marinate for at least 1 hour or overnight in the refrigerator for better flavor.

    Sauté Onions

    Heat the cooking oil in a large pot over medium heat. Add the finely chopped onions and sauté until they are golden brown, about 8-10 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, and sauté for an additional 2-3 minutes until fragrant.

    Cook Tomatoes

    Add the chopped tomatoes to the pot, along with the slit green chilies. Cook until the tomatoes break down and the mixture becomes thick, about 10-15 minutes.

    Add Marinated Goat

    Add the marinated goat meat to the pot. Stir well to coat the meat with the spice mixture and cook for about 5 minutes on high heat.

    Add Water and Simmer

    Pour the water into the pot, bringing it to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the goat meat is tender. Stir occasionally and add more water if needed.

    Finish with Garam Masala

    Once the meat is tender, stir in the garam masala and adjust salt if necessary. Cook for an additional 10 minutes.

    Garnish and Serve

    Remove from heat, garnish with fresh chopped cilantro, and serve hot with rice or bread.
