Grate the Carrots
Wash and peel the carrots, then grate them using a box grater or a food processor. You should have about 4-5 cups of grated carrots.

Prepare the Nuts and Raisins
If using, chop the nuts and set them aside. Soak the raisins in warm water for about 10 minutes and drain.

Add Flavorings
Stir in the cardamom powder and mix well. If using, add the chopped nuts and raisins at this stage.

Continue to cook for an additional 5-10 minutes, allowing the mixture to come together and develop a rich flavor. Remove from heat.

Gajar Halwa can be served warm or at room temperature. Garnish with additional nuts before serving if desired.
