Rinse the Rice
Thoroughly rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch and prevent the rice from becoming sticky.

Prep the Vegetables
Dice the carrot, bell pepper, and potato into small cubes. Chop the green beans and set all the vegetables aside.

Cook the Rice
In a large pot, bring 3 cups of water to a boil. Add the rinsed basmati rice and a pinch of salt. Reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes, then fluff with a fork.

Add Spices
Sprinkle in the coriander powder, turmeric powder, garam masala, salt, and black pepper. Stir well to coat the vegetables in the spices and cook for an additional 2-3 minutes.

Combine Rice and Vegetables
Gently fold the cooked rice into the sautéed vegetables and spices. Drizzle with lemon juice and mix everything together until well combined. Taste and adjust seasoning if necessary.

Garnish
Transfer the Fresh Vegetable Biryani to a serving platter. Garnish with chopped cilantro on top.

Serve hot with raita or your favorite yogurt dip on the side.
