Preparation

    Rinse and Soak Lentils

    Rinse the red and yellow lentils under cold water until the water runs clear. Soak them in water for about 30 minutes.

    Chop Vegetables

    Finely chop the onion, tomato, green chili, garlic, ginger, and cilantro.

Cooking

    Cook Lentils

    In a large pot, add the soaked lentils and 4 cups of water. Bring to a boil, then lower the heat and simmer for about 20-25 minutes or until the lentils are soft.

    Prepare the Tempering

    In a pan, heat 2 tablespoons of cooking oil or ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds.

    Add Onions

    Add the chopped onions to the pan and sauté until golden brown.

    Combine Vegetables and Spices

    Stir in the chopped garlic, ginger, and green chili. Cook for another minute, then add the chopped tomato, turmeric powder, garam masala, and salt. Cook until the tomatoes are soft.

    Mix with Lentils

    Once the lentils are cooked, add the tempering mixture to the lentils. Stir well, and let it simmer for an additional 5-10 minutes. Adjust salt and add red chili powder to taste.

    Garnish and Serve

    Garnish with chopped cilantro before serving hot with rice or bread.
