    Prep the Ingredients

    Finely chop the onion, ginger, and garlic. Set aside.

    Prepare the Fish

    Cut the deboned fish fillets into bite-sized pieces and season lightly with salt and black pepper.

    Sauté the Aromatics

    In a large pan, heat vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the ginger and garlic, cooking for an additional 2 minutes until fragrant.

    Add Spices

    Stir in the turmeric, cumin, coriander, and red chili powder. Cook for 1-2 minutes to toast the spices.

    Incorporate Tomato Puree

    Add the tomato puree and mix well, allowing it to cook for another 3 minutes.

    Add Coconut Milk

    Pour in the coconut milk and bring the mixture to a gentle simmer.

    Cook the Fish

    Carefully add the seasoned fish pieces into the simmering sauce. Cook for 10-12 minutes, or until the fish is cooked through and flakes easily with a fork.

Finishing Touches

    Once cooked, remove from heat and garnish with fresh cilantro. Serve hot over rice or with naan bread.
