Sauté the Onions
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the chopped onions and sauté until they become translucent, about 5 minutes.

Add Garlic and Ginger
Stir in the minced garlic and ginger, cooking for an additional 2 minutes until fragrant.

Brown the Beef
Increase the heat to medium-high and add the beef cubes to the pot. Brown the beef on all sides, about 5-7 minutes.

Add Spices
Sprinkle the curry powder, ground cumin, turmeric, salt, and black pepper over the beef and stir well to coat the meat with the spices.

Add Liquids
Pour in the beef broth (or water) and coconut milk. Stir to combine everything, then bring the mixture to a boil.

Simmer
Once boiling, reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, or until the beef is tender.
Serving

Garnish and Serve
Once the beef is tender, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and lime wedges on the side.
