    Prepare the Ingredients

    Start by cutting the boneless beef into bite-sized pieces. Dice the onion, mince the garlic, and grate the ginger. Slice the bell pepper into strips.

    Sauté Aromatics

    In a large skillet or wok, heat the vegetable oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté for about 3-4 minutes or until the onion becomes translucent.

    Cook the Beef

    Increase the heat to medium-high, add the beef pieces to the skillet, and cook until browned on all sides, about 5-7 minutes.

    Add Coconut Milk and Spices

    Pour in the coconut milk and add the soy sauce, curry powder, salt, and black pepper. Stir well to combine all ingredients.

    Simmer

    Reduce the heat to low and let the mixture simmer for about 15-20 minutes, stirring occasionally, until the beef is tender and the sauce thickens.

    Add Bell Pepper

    In the last 5 minutes of cooking, add the sliced bell pepper to the skillet, stirring to incorporate it into the sauce.

    Finish with Cilantro

    Once done, remove from heat and stir in the chopped cilantro. Adjust seasoning with additional salt and pepper if needed.
