Method

Chole Preparation

    Soak Chickpeas

    Soak 1 cup of dried chickpeas in water overnight or for at least 6-8 hours.

    Cook Chickpeas

    Drain the soaked chickpeas, then add them to a pressure cooker with 2 cups of water and salt. Cook for about 15-20 minutes until soft.

    Prepare Masala

    In a pan, heat 2 tablespoons of oil. Add 1 teaspoon of cumin seeds and let them sizzle. Add 1 chopped onion and sauté until golden brown.

    Add Spices

    Add 1 tablespoon of ginger-garlic paste, 1 slit green chili, 1 teaspoon of turmeric powder, 1 teaspoon of coriander powder, and mix well for a minute.

    Add Tomato

    Stir in 1 pureed tomato and cook until the oil separates. Then, add the cooked chickpeas along with some of the cooking liquid.

    Finish Chole

    Sprinkle in 1 teaspoon of garam masala and adjust salt to taste. Simmer for 5 minutes.

Bhature Preparation

    Make Dough

    In a bowl, mix 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of sugar, and 1 teaspoon of salt. Add 1 tablespoon of yogurt and mix well. Gradually add warm water to form a smooth dough.

    Rest Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes.

    Fry Bhature

    Heat oil in a deep frying pan. Divide the dough into small balls and roll them out into circles. Fry in hot oil until they puff up and are golden brown.

Raita Preparation

    Prepare Raita

    In a bowl, whisk 1 cup of yogurt until smooth. Add the grated cucumber, 1 teaspoon of cumin powder, and salt to taste. Mix well and garnish with chopped coriander.

Salad Preparation

    Prepare Salad

    In a bowl, combine sliced onion, sliced tomato, and sliced cucumber. Drizzle with lemon juice and add salt to taste. Toss gently.
