Marinating the Chicken

    Prepare the Marinade

    In a large bowl, mix plain yogurt, minced garlic, grated ginger, garam masala, cumin powder, coriander powder, turmeric powder, salt, and lemon juice to create a marinade.

    Marinate the Chicken

    Cut the chicken breast into bite-sized pieces and add them to the marinade. Ensure all chicken pieces are well-coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.

Cooking the Chicken

    Grill the Chicken

    Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken pieces for about 6-8 minutes, turning occasionally, until fully cooked and slightly charred. Remove from heat and set aside.

Preparing the Sauce

    Sauté Vegetables

    In a large skillet, heat the oil over medium heat. Add the chopped onion and bell pepper. Sauté until softened, about 5-7 minutes.

    Add minced garlic and grated ginger to the skillet. Sauté for an additional 1-2 minutes until fragrant.

    Make the Sauce

    Add the canned tomatoes (with juices) to the skillet. Stir well and bring to a simmer. Cook for about 10 minutes, allowing the sauce to thicken slightly.

    Incorporate Coconut Milk

    Pour in the coconut milk and stir to combine. Let the sauce simmer for an additional 5 minutes.

Combining Everything

    Mix Chicken with Sauce

    Add the grilled chicken pieces to the sauce, stirring gently to coat. Allow to simmer on low heat for 5 minutes to meld the flavors.

    Remove from heat and garnish with chopped cilantro. Serve hot with rice or naan.
