Method

Preparation

  1. 1

    Prepare the Ingredients

Finely chop the onion, garlic, ginger, green chilies, and coriander leaves. Set aside.

  2. 2

    Mix the Chicken Mince

In a large mixing bowl, combine the chicken mince with the chopped vegetables and spices (cumin powder, coriander powder, red chili powder, garam masala, salt, and crushed black peppercorns).

  3. 3

    Add Binding Ingredients

Add the besan and egg to the chicken mixture. Mix thoroughly until all ingredients are well combined.

Shaping and Cooking

  1. 4

    Shape the Kebabs

Wet your hands with water and take a handful of the chicken mixture. Mold it around the skewer, shaping it into a long, cylindrical kebab. Repeat with the remaining mixture.

  2. 5

    Preheat the Tandoor

Preheat your tandoor to a high temperature (around 400°F or 200°C) for about 15 minutes.

  3. 6

    Cook the Kebabs

Carefully place the skewers in the preheated tandoor and cook for 10-15 minutes, turning occasionally, until the kebabs are golden brown and cooked through.

Serving

  1. 7

    Serve

Remove the kebabs from the skewers and serve hot with mint chutney and onion rings.
