    Chop Vegetables

    Finely chop the onion, tomatoes, green chilies, garlic, and ginger.

    Prepare Chickpeas

    If using dry chickpeas, soak them overnight and boil until tender. If using canned, rinse and drain them.

Cooking

    Heat Oil

    In a large pan, heat the oil over medium heat.

    Cook Onions

    Add the chopped onions to the pan and sauté until they become golden brown.

    Add Garlic and Ginger

    Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Spices

    Add the chopped tomatoes along with cumin seeds, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil starts to separate.

    Add Chickpeas

    Stir in the chickpeas and mix well. Add a little water if you prefer a thinner consistency.

    Simmer

    Reduce the heat and let the mixture simmer for about 10-15 minutes, allowing the flavors to meld.

    Finish with Garam Masala

    Stir in the garam masala and let it cook for an additional 2-3 minutes.

    Garnish and Serve

    Remove from heat, garnish with fresh cilantro, and serve hot with rice or naan.
