Method

Preparation

  1. 1

    Prepare the Vegetables

Wash and trim the okra by cutting off the ends and slicing them into 1-inch pieces. Peel and chop the onion, tomato, and potato into small cubes.

Cooking

  1. 2

    Cook the Onions

In a large pan, heat the cooking oil over medium heat. Add the chopped onions and sauté until they become translucent and lightly golden, about 5-7 minutes.

  2. 3

    Add the Potatoes

Stir in the chopped potatoes and cook for about 5 minutes, stirring occasionally, until they start to soften.

  3. 4

    Incorporate the Okra

Add the sliced okra to the pan. Stir well and cook for another 5 minutes, allowing the okra to combine with the onions and potatoes.

  4. 5

    Add Tomatoes and Spices

Add the chopped tomatoes, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix everything well, cover the pan, and let it cook on low heat for about 10-15 minutes until the vegetables are tender.

  5. 6

    Finish with Garam Masala

Once the vegetables are cooked, sprinkle the garam masala over the mixture and stir gently. Cook for an additional 2-3 minutes.

  6. 7

    Garnish

Turn off the heat, and garnish with fresh coriander leaves before serving.
