Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Mix well.

    Add Wet Ingredients

    Add the yogurt and warm water to the dry ingredients. Mix until a dough starts to form.

    Knead the Dough

    Transfer the dough to a floured surface. Knead the dough for about 8-10 minutes until it is smooth and elastic.

    Rest the Dough

    Add one tablespoon of oil to the dough and coat it. Cover the bowl with a damp cloth and let it rest for at least 1 hour.

Frying Bhatooras

    Prepare Oil for Frying

    In a deep frying pan or kadhai, heat 4 cups of oil over medium-high heat until hot.

    Shape the Dough

    After the resting period, divide the dough into small balls (about the size of a golf ball). Flatten each ball slightly with your fingers.

    Roll the Dough

    Using a rolling pin, roll out each dough ball into a circle about 6 inches in diameter. The dough should be about 1/4 inch thick.

    Fry the Bhatooras

    Once the oil is hot, carefully slide the rolled dough into the hot oil. Fry until it puffs up and turns golden brown, about 1-2 minutes on each side.

    Drain Excess Oil

    Using a slotted spoon, remove the bhatoora from the oil and drain on paper towels to absorb excess oil.

    Serve Hot

    Serve the bhatooras hot with your choice of curry or chutney.
