For Aloo Tikki (Potato Patties)

Prepare the Potatoes
Boil the potatoes until they are tender. Drain and allow them to cool.

Mash the Potatoes
Once cooled, peel and mash the potatoes in a mixing bowl until smooth.

Mix Ingredients
Add green peas, coriander powder, cumin powder, red chili powder, garam masala, salt, and chopped coriander leaves to the mashed potatoes. Mix well.

Shape the Patties
Divide the mixture into equal portions and shape each portion into a round flat patty.

Fry the Patties
Heat oil in a pan over medium heat. Fry the patties until golden brown on both sides. Drain excess oil on paper towels.
For Chickpea Batter

Prepare the Batter
In a bowl, mix chickpea flour, water, turmeric powder, baking soda, and salt until you achieve a smooth batter.

Add Tomatoes and Spices
Add minced ginger and garlic, stirring for a minute. Then add chopped tomatoes, coriander powder, garam masala, and salt. Cook until tomatoes are soft.

Add Chickpeas
Stir in the canned chickpeas and cook for an additional 5-7 minutes, allowing the flavors to meld.

Garnish
Garnish with fresh coriander leaves before serving.
Assemble the Dish

Dip the fried potato patties in the chickpea batter and serve them topped with the channa masala.
