    Prep the Vegetables

    Peel and dice the potatoes into bite-sized cubes. Rinse and cut the cauliflower into smaller florets.

    Chop the Aromatics

    Finely chop the onion, mince the garlic, and grate the ginger.

Cooking

    Sauté the Aromatics

    In a large skillet or pan, heat the vegetable oil over medium heat. Add the chopped onions and sauté until golden brown, about 5 minutes.

    Add Garlic and Ginger

    Stir in the minced garlic and grated ginger. Cook for an additional minute until fragrant.

    Toast the Spices

    Add the cumin seeds, fenugreek seeds, and dried red chilies to the pan. Toast for 1-2 minutes, stirring continuously to prevent burning.

    Incorporate the Vegetables

    Add the diced potatoes and cauliflower florets to the skillet. Stir well to coat the vegetables with the spices.

    Season and Simmer

    Sprinkle in the turmeric powder, coriander powder, and salt. Add water and bring to a boil. Cover the pan, reduce heat, and simmer for 15-20 minutes, or until the vegetables are tender.

    Finish with Garam Masala

    Once the vegetables are cooked, sprinkle garam masala over the top and gently stir to combine. Cook for another 2-3 minutes.

    Transfer the Aloo Gobi to a serving platter. Enjoy hot with rice or flatbread.
