Marinade and Salad

Method

Preparation and Assembly

  1. 1

    Marinate the Skirt Steak

In a bowl, combine the creole mustard, olive oil, minced garlic, salt, and black pepper to create the marinade. Add the skirt steak to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Prepare the Salad

In a large bowl, combine the mixed salad greens, cherry tomatoes, and cucumber. In a separate small bowl, whisk together the red wine vinegar, olive oil, salt, and black pepper to make the vinaigrette. Pour the vinaigrette over the salad and toss to combine.

  3. 3

    Cook the Skirt Steak

Preheat a grill or skillet over medium-high heat. Remove the skirt steak from the marinade and cook for about 3-4 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes before slicing.

  4. 4

    Serve

Slice the skirt steak against the grain and place it over the tossed garden salad. Drizzle with any remaining vinaigrette if desired.
