    Prepare the Shrimp

    In a bowl, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together the egg and milk.

    Coat the Shrimp

    Dip each shrimp into the egg mixture, then dredge in the flour-cornmeal mixture until well coated.

    Fry the Shrimp

    In a large skillet, heat the oil over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.

    Assemble the Po' Boy

    Slice the buns in half and spread a layer of tartar sauce on the bottom half. Layer with the fried or grilled shrimp, followed by tomato slices and a generous amount of creole cole slaw.

    Serve

    Top with the other half of the bun and serve immediately with extra tartar sauce on the side.
