    Prepare the Ingredients

    Gather all the ingredients and dice the chicken, tasso, and bell pepper. Mince the garlic and slice the andouille sausage.

    Cook the Chicken

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and cook until browned, about 5-7 minutes. Remove and set aside.

    Sauté the Vegetables

    In the same pot, add the onion, bell pepper, and garlic. Sauté until the vegetables are soft, about 5 minutes.

    Add the Meats

    Stir in the tasso, andouille sausage, and cooked chicken. Cook for another 3 minutes.

    Combine Rice and Broth

    Add the rice to the pot and stir well. Pour in the chicken broth and add the Cajun seasoning, salt, and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

    Add Shrimp

    In the last 5 minutes of cooking, add the shrimp to the pot. Stir to combine and cover until the shrimp are pink and cooked through.

    Remove from heat, garnish with sliced green onions, and serve hot.
