    In a large skillet, melt 1 cup of butter over medium heat. Gradually whisk in 0.5 cup of flour, stirring constantly for about 15-20 minutes until the mixture turns a deep brown color.

    Add diced celery, onion, and green bell pepper to the roux. Cook for about 5 minutes until vegetables are softened, then add minced garlic and cook for an additional minute.

    Add Crawfish and Seasonings

    Stir in the crawfish tails, sherry, cajun seasoning, salt, and black pepper. Cook for another 5-10 minutes, allowing flavors to meld and the crawfish to heat through.
