In a medium pot, bring 4 cups of water to a boil. Add 2 cups of white rice, reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender.

In a large skillet, melt 1 cup of butter over medium heat. Gradually whisk in 0.5 cup of flour, stirring constantly for about 15-20 minutes until the mixture turns a deep brown color.

Add Crawfish and Seasonings
Stir in the crawfish tails, sherry, cajun seasoning, salt, and black pepper. Cook for another 5-10 minutes, allowing flavors to meld and the crawfish to heat through.
