    Prepare the Roux

    In a saucepan, melt the butter over medium heat. Add the chopped onion, celery, and bell pepper. Sauté until the vegetables are soft, about 5 minutes. Gradually whisk in the flour, stirring constantly until the mixture turns a light blonde color, about 5-7 minutes.

    Combine Ingredients

    Remove the saucepan from heat. Gently fold in the crab meat, minced garlic, Cajun seasoning, and Tabasco sauce. Allow the mixture to cool slightly before adding the beaten eggs. Mix until well combined.

    Shape and Coat

    Shape the mixture into patties or chops, about 2 inches thick. Roll each chop in bread crumbs until fully coated.

    Sauté the Chops

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the crab chops and sauté until golden brown on both sides, about 3-4 minutes per side.

    Remove the chops from the skillet and place on paper towels to drain excess oil. Serve hot as an appetizer or main dish.
