    Prepare the Catfish

    If frying, heat oil in a deep fryer or large skillet to 350°F (175°C). For grilled, preheat the grill to medium-high heat. Season the catfish fillets with salt and pepper.

    Fry or Grill the Catfish

    For fried catfish, dredge fillets in cornmeal and fry for 4-5 minutes on each side until golden brown. For grilled catfish, brush with oil and grill for 3-4 minutes on each side until cooked through.

    Prepare the Rolls

    Slice the French bread hoagie rolls in half lengthwise and lightly toast them if desired.

    Assemble the Po' Boys

    Place the cooked catfish on the bottom half of each roll. Top with slices of tomato, lettuce, a generous scoop of creole cole slaw, and finish with tartar sauce.

    Serve

    Close the sandwiches and serve immediately with extra tartar sauce on the side.
