Cooking Instructions

  1. 1

    Prepare the Potatoes

In a pot of boiling salted water, add the halved new potatoes and cook until tender, about 15-20 minutes. Drain and set aside.

  2. 2

    Caramelize the Onions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15 minutes. Remove from skillet and set aside.

  3. 3

    Season the Fish

In a small bowl, mix together the cayenne pepper, dried oregano, paprika, salt, and black pepper. Rub this spice mixture onto both sides of the fish fillets.

  4. 4

    Cook the Fish

In the same skillet, add the remaining tablespoon of olive oil over medium-high heat. Once hot, add the seasoned fish fillets and sear for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.

  5. 5

    Grill the Vegetables

While the fish is cooking, grill the mixed vegetables until they are tender and slightly charred, about 5-7 minutes.

  6. 6

    Serve

On a plate, serve the blackened fish topped with caramelized onions, alongside the grilled vegetables and boiled new potatoes.
