Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15 minutes. Remove from skillet and set aside.

Season the Fish
In a small bowl, mix together the cayenne pepper, dried oregano, paprika, salt, and black pepper. Rub this spice mixture onto both sides of the fish fillets.

Cook the Fish
In the same skillet, add the remaining tablespoon of olive oil over medium-high heat. Once hot, add the seasoned fish fillets and sear for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.

Grill the Vegetables
While the fish is cooking, grill the mixed vegetables until they are tender and slightly charred, about 5-7 minutes.
