Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced bell peppers and onion. Season with salt and black pepper. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized.

Prepare the Roast Beef
While the vegetables are cooking, slice the roast beef into thin strips if not already done.

Toast the Hoagie Rolls
Preheat your oven to 350°F (175°C). Place the hoagie rolls on a baking sheet and toast them in the oven for about 5 minutes until they are warm and slightly crispy.

Assemble the Sandwiches
Layer the sliced roast beef on the toasted hoagie rolls, followed by the sautéed bell peppers and onions. Place 2 slices of Swiss cheese on top of each sandwich.

Melt the Cheese
Return the assembled sandwiches to the oven and bake for an additional 5 minutes until the Swiss cheese is melted and bubbly.

Remove the sandwiches from the oven, let them cool for a minute, then serve warm.
