Prepare the batter
In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and pepper. Gradually add the beer, whisking until smooth and free of lumps.

Heat the oil
In a deep frying pan or fryer, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the cod fillets.

Coat the cod
Pat the cod fillets dry with paper towels. Dip each fillet into the batter, ensuring it is fully coated.

Fry the cod
Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Use a slotted spoon to remove the fillets and place them on paper towels to drain excess oil.

Serve
Serve the beer-battered cod with a side of fries (or your choice of side), a cup of tartar sauce, and lemon wedges on the side.
