Preparation of Meats
Slice the cured meats
Using a sharp knife, thinly slice the prosciutto, salami, capicola, and bresaola. Aim for a thickness of about 1/8 inch for the best texture and flavor.

Cut the cheeses
Cut the Parmesan, Gorgonzola, Mozzarella, and Pecorino cheeses into bite-sized cubes or wedges. This will make them easy to pick up and enjoy.
Assembly
Arrange the platter
On a large serving platter, arrange the sliced cured meats in one section and the cheeses in another. Make sure to leave some space in between for the accompaniments.
Add accompaniments
Place the mixed olives, cherry tomatoes, and fresh basil leaves around the meats and cheeses. Drizzle the olive oil and balsamic vinegar over the tomatoes and basil for added flavor.
Serve with focaccia
Slice the focaccia bread into small pieces and place it alongside the platter for dipping and enjoying with the meats and cheeses.
