Sausage Preparation

    Prepare the casings

    Soak the sausage casings in water for at least 30 minutes before using to ensure they are pliable.

    Mix the ingredients

    In a large bowl, combine ground pork, pork fat, minced garlic, salt, black pepper, fennel seeds, paprika, red pepper flakes, and brown sugar. Mix well until all ingredients are thoroughly combined.

    Add ice water

    Gradually add ice water to the meat mixture, mixing until the mixture is sticky and well-blended.

    Stuff the casings

    Rinse the soaked casings and slide one end onto a sausage stuffer. Carefully fill the casings with the sausage mixture, being careful not to overstuff.

    Tie off the sausages

    Twist the filled sausages at regular intervals to create links, and tie off the ends securely.

    Cook the sausages

    Cook the sausages in a skillet over medium heat, or grill them until they reach an internal temperature of 160°F (70°C).

    Let the sausages rest for a few minutes before serving. Enjoy with your choice of sides or in a bun.
