Cook the Vegetables and Ham
In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Add the chopped onion, bell pepper, and ham. Sauté for about 3-4 minutes until the vegetables are softened.

Add Eggs
Pour the beaten eggs over the sautéed mixture. Let it cook undisturbed for about 2 minutes until the edges start to set.

Finish the Omelet
Using a spatula, gently lift the edges of the omelet and tilt the pan to allow uncooked egg to flow to the edges. If desired, sprinkle the shredded cheddar cheese on top and fold the omelet in half. Cook for an additional 1-2 minutes until the cheese is melted and the eggs are fully cooked.

Serve
Slide the omelet onto a plate and keep warm while you prepare the home fries.

Prepare the Potatoes
Dice the peeled potatoes into small cubes, about 1/2 inch in size.

Cook the Potatoes
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced potatoes, salt, black pepper, and paprika (if using). Stir to combine.

Fry the Potatoes
Cook the potatoes for about 15-20 minutes, stirring occasionally, until they are golden brown and crispy on the outside and tender on the inside.

Remove from heat and serve alongside the omelet.
