Preparing the Veggie Burger

Mash the Beans
In a mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

Combine Ingredients
Add the cooked quinoa, breadcrumbs, chopped onion, minced garlic, cumin, chili powder, salt, pepper, and olive oil to the mashed beans. Mix well until fully combined.

Form Patties
Divide the mixture into 2 equal portions and shape them into patties. Place them on a plate and refrigerate for 30 minutes to firm up.

Cook the Patties
In the same skillet, add the veggie patties over medium heat. Cook for 4-5 minutes on each side until they are golden brown and heated through.

Once the patties are cooked, top each patty with shredded mozzarella cheese. Cover the skillet with a lid for 1-2 minutes until the cheese is melted.
