Spanakopita

Greek Salad

Method

Spanakopita

  1. 1

    Prepare the Filling

In a large skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sautéing until soft and translucent, about 5 minutes.

  2. 2

    Add Spinach

Stir in the fresh spinach and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

  3. 3

    Mix the Cheese

In a large bowl, combine the wilted spinach mixture with feta, ricotta, egg, salt, black pepper, dill, and nutmeg. Mix thoroughly until well combined.

  4. 4

    Prepare Phyllo Dough

Preheat the oven to 375°F (190°C). On a clean surface, lay out a sheet of phyllo dough and brush lightly with olive oil. Layer 5 more sheets in the same way.

  5. 5

    Fill and Fold

Place a portion of the spinach filling along one edge of the phyllo, then fold the dough over the filling. Fold the sides in and roll it up tightly. Repeat with remaining phyllo and filling.

  6. 6

    Bake

Arrange the rolls on a baking sheet lined with parchment paper. Brush the tops with olive oil and bake for 25-30 minutes, or until golden brown.

Greek Salad

  1. 7

    Prepare the Vegetables

Dice the cucumber and tomatoes into bite-sized pieces. Thinly slice the red onion.

  2. 8

    Combine Ingredients

In a large bowl, combine the diced cucumbers, tomatoes, and sliced onion.

  3. 9

    Add Olives and Feta

Add the kalamata olives and crumbled feta cheese to the vegetable mix.

  4. 10

    Dress the Salad

In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.

  5. 11

    Serve

Let the salad sit for 10 minutes to allow flavors to meld, then serve alongside the warm spanakopita.
