Filling Preparation

    Sauté the Onions and Garlic

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is translucent.

    Add Spinach

    Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool.

    Mix Filling Ingredients

    In a large bowl, combine the cooled spinach mixture, crumbled feta cheese, beaten eggs, salt, black pepper, and nutmeg. Stir until well combined.

Assembling the Spanakopita

    Prepare the Phyllo Dough

    Preheat the oven to 375°F (190°C). Lay out the phyllo dough sheets and cover them with a damp cloth to prevent drying. Melt the butter in a small saucepan.

    Layer the Phyllo Dough

    Grease a baking dish with some of the melted butter. Take one sheet of phyllo dough, brush it with melted butter, and place it in the dish. Repeat this process with 5 more sheets, layering them on top of each other.

    Add the Filling

    Spread the spinach and feta filling evenly over the layered phyllo dough.

    Top with Phyllo Layers

    Continue layering more phyllo sheets on top of the filling, brushing each with melted butter, until you have about 6 layers.

    Cut and Bake

    Using a sharp knife, carefully cut the top layers of phyllo into squares or diamonds. Bake in the preheated oven for 30-35 minutes, or until golden brown and crispy.
