Turkey Preparation

    Preheat the Oven

    Preheat your oven to 325°F (165°C).

    Prepare the Turkey

    Remove the turkey giblets and neck from the cavity. Pat the turkey dry with paper towels.

    Season the Turkey

    Rub the olive oil over the entire surface of the turkey. Season generously with salt, black pepper, thyme, rosemary, and sage. Stuff the garlic cloves, onion, and lemon into the cavity of the turkey.

    Roast the Turkey

    Place the turkey in a roasting pan and roast in the preheated oven for about 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C). Baste occasionally with the pan drippings.

Stuffing Preparation

    Sauté the Vegetables

    In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté until softened, about 5-7 minutes.

    Combine the Stuffing Ingredients

    In a large bowl, combine the sautéed vegetables with the bread cubes, parsley, chicken broth, salt, black pepper, dried sage, and dried thyme. Mix well.

    Stuff the Turkey

    Stuff the turkey cavity with the prepared stuffing mixture. Any remaining stuffing can be baked separately in a greased dish.

    In a large mixing bowl, toss the chopped carrots and Brussels sprouts with olive oil, salt, and black pepper.
