Method
Turkey Preparation
- 1
Preheat the Oven
Preheat your oven to 325°F (165°C).
- 2
Prepare the Turkey
Remove the turkey giblets and neck from the cavity. Pat the turkey dry with paper towels.
- 3
Season the Turkey
Rub the olive oil over the entire surface of the turkey. Season generously with salt, black pepper, thyme, rosemary, and sage. Stuff the garlic cloves, onion, and lemon into the cavity of the turkey.
- 4
Stuffing Preparation
- 5
Sauté the Vegetables
In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and sauté until softened, about 5-7 minutes.
- 6
Combine the Stuffing Ingredients
In a large bowl, combine the sautéed vegetables with the bread cubes, parsley, chicken broth, salt, black pepper, dried sage, and dried thyme. Mix well.
- 7
Stuff the Turkey
Stuff the turkey cavity with the prepared stuffing mixture. Any remaining stuffing can be baked separately in a greased dish.
Vegetable Preparation
- 8
Prepare the Vegetables
In a large mixing bowl, toss the chopped carrots and Brussels sprouts with olive oil, salt, and black pepper.
- 9
Roast the Vegetables
Spread the vegetables on a baking sheet and roast in the oven for about 25-30 minutes, or until they are tender and caramelized.
Gravy Preparation
- 10
Make the Gravy
After the turkey is done roasting, remove it from the roasting pan and keep warm. Pour the drippings into a saucepan, skimming off excess fat if necessary.
- 11
Create a Roux
In the same saucepan, whisk in the flour over medium heat until smooth, cooking for about 1-2 minutes.
- 12
Finish the Gravy
Gradually whisk in the chicken broth and bring to a simmer. Cook until thickened, about 5-10 minutes. Season with salt and black pepper.
