Method

Preparation of Beef

  1. 1

    Season the Beef

Rub the beef roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder.

  2. 2

    Sear the Beef

In a large skillet, heat a bit of olive oil over medium-high heat. Sear the beef roast on all sides until browned, about 3-4 minutes per side. Remove from heat and set aside.

Roasting the Beef

  1. 3

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 4

    Prepare the Roasting Pan

Place the seared beef in a roasting pan. Surround it with chopped carrots, potatoes, and onion.

  3. 5

    Add Herbs

Sprinkle the fresh rosemary and thyme over the beef and vegetables.

  4. 6

    Roast

Roast in the preheated oven for about 1.5 hours, or until the internal temperature of the beef reaches 135°F (medium-rare) to 145°F (medium).

Cooking Green Beans

  1. 7

    Prepare Green Beans

While the beef is roasting, wash and trim the green beans. Cook them in boiling water for about 5-7 minutes until tender. Drain and set aside.

Making Gravy

  1. 8

    Prepare Gravy

In a small bowl, mix the cornstarch with water to create a slurry.

  2. 9

    Combine with Broth

After the beef is done roasting, remove it from the pan and let it rest. Pour the beef broth into the roasting pan and bring to a simmer over medium heat.

  3. 10

    Thicken the Gravy

Stir in the cornstarch slurry and cook until the gravy thickens, about 3-5 minutes.

Serving

  1. 11

    Slice and Serve

Slice the roast beef and serve with the roasted vegetables and green beans. Drizzle the gravy over the top.
