Method

Roasting the Beef

    Prepare the Roast

    Preheat your oven to 375°F (190°C). Rub the beef roast with olive oil, then season it generously with salt, black pepper, garlic powder, and onion powder on all sides.

    Roast the Beef

    Place the seasoned beef roast in a roasting pan and insert into the preheated oven. Roast for about 1 hour, or until a meat thermometer reads 135°F (57°C) for medium-rare doneness.

    Rest the Beef

    Remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for 15-20 minutes before slicing.

Assembling the Sandwich

    Prepare the Ingredients

    While the beef is resting, wash and dry the romaine lettuce. Slice the tomato and avocado.

    Once the roast has rested, slice it thinly against the grain.

    Build the Club Sandwich

    On a slice of sourdough bread, spread a layer of mayonnaise, then add a layer of romaine lettuce, followed by a layer of sliced tomato, avocado, and a few slices of roast beef. Top with a slice of cheddar cheese and another slice of bread. Repeat the layers for a second sandwich and finish with a final slice of bread on top.

    Cut the sandwich diagonally into quarters and serve immediately, optionally with extra mayonnaise or Dijon mustard on the side.
