Preparation

1

Preheat the Oven

Preheat your oven to 325°F (163°C).

2

Season the Roast

In a small bowl, mix together salt, black pepper, garlic powder, onion powder, thyme, and rosemary. Rub this seasoning mixture all over the beef roast, ensuring an even coating.

3

Prepare Vegetables

Chop the carrots, quarter the potatoes, and quarter the onion. Place them in the bottom of a large roasting pan.

Cooking

4

Sear the Roast

In a large skillet over medium-high heat, sear the beef roast on all sides until browned (about 3-4 minutes per side).

5

Combine Ingredients in Roasting Pan

After searing, place the roast on top of the vegetables in the roasting pan. Pour the beef broth and Worcestershire sauce over the roast and vegetables.

6

Roasting

Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for approximately 2.5 to 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

7

Rest the Roast

Once cooked, remove the roast from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute.

Serving

8

Slice and Serve

Slice the roast against the grain and serve it with the roasted vegetables. Enjoy your delicious roast beef!
