Cook the Steak and Vegetables
In a medium skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced steak and cook for 2-3 minutes until browned. Add the diced peppers and onions, and cook for an additional 3-4 minutes until the vegetables are tender. Season with salt and black pepper. Remove from heat and set aside.

Cook the Omelet
In the same skillet, heat the remaining tablespoon of olive oil over medium heat. Pour in the whisked eggs and cook for about 2 minutes, gently lifting the edges as it sets. Once the bottom is set, add the cooked steak and vegetable mixture on one half of the omelet. Sprinkle with mozzarella cheese.

Fold and Serve
Carefully fold the omelet in half over the filling. Cook for another minute until the cheese is melted. Slide the omelet onto a plate and set aside.

Prepare the Toast
While the home fries are cooking, toast the bread slices. Once toasted, spread butter on each slice.
