    Prepare the Chicken

    Season the chicken breasts with salt and black pepper. Heat olive oil in a grill pan over medium heat.

    Grill the Chicken

    Place the seasoned chicken breasts on the grill pan and cook for about 6-7 minutes on each side, or until fully cooked (internal temperature of 165°F). Remove from heat and let rest for a few minutes before slicing.

    Assemble the Panini

    Spread 1 tablespoon of pesto sauce on each slice of ciabatta bread. Layer sliced grilled chicken, mozzarella cheese, and tomato slices on two of the bread slices. Top with the remaining two slices of bread.

    Heat a panini press or grill pan over medium heat. Place the assembled sandwiches in the press and cook until the bread is golden brown and the cheese is melted, about 4-5 minutes.

    Preheat the oven to 425°F (220°C). Cut the potatoes into fries and place them in a bowl.
