    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove from skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Sauté the Vegetables

    In the same skillet, using the bacon drippings, add the finely chopped onion and sauté until translucent. Add the diced tomatoes and cook for an additional 2 minutes.

    Prepare the Egg Mixture

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Make the Omelet

    Pour the egg mixture over the sautéed vegetables in the skillet. Cook on medium heat until the edges begin to set, then sprinkle crumbled bacon and feta cheese on top. Carefully fold the omelet in half and cook for another minute until the cheese is melted.

    While the omelet is cooking, heat olive oil in another skillet over medium heat. Add the cubed potatoes and season with salt, black pepper, and paprika.
