Prepare the Eggs

Crack the two large eggs into a bowl. You can prepare them sunny-side up, over-easy, scrambled, or however you prefer. Season with salt and pepper to taste.

Cook the Eggs

Heat a non-stick skillet over medium heat. Add a small amount of oil or butter if desired. Pour the eggs into the skillet and cook until your preferred doneness is reached, about 3-5 minutes.

Prepare the Potatoes

Wash and peel the potatoes. Dice them into small cubes. Chop the onion and bell pepper into small pieces.

Cook the Home Fries

In a large skillet, heat the vegetable oil over medium-high heat. Add the diced potatoes, onion, and bell pepper. Season with salt and black pepper. Cook, stirring occasionally, for about 15-20 minutes or until the potatoes are golden brown and tender.

Toast the Bread

While the home fries are cooking, toast the slices of bread in a toaster or on a skillet until golden brown.

Butter the Toast

Spread butter on the toasted bread as soon as it comes out of the toaster for a delicious finish.
