Preparing the Chicken

    Prepare Chicken

    Preheat your oven to 400°F (200°C). Start by seasoning the chicken breasts with salt and pepper on both sides.

    Dredge Chicken

    Set up a dredging station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese. Dip each seasoned chicken breast first in flour, then in the egg, and finally in the breadcrumb mixture.

    Cook Chicken

    In a large skillet, heat 1 cup of olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove the chicken and place on a paper towel to drain excess oil.

Cooking the Pasta

    Boil Water

    In a large pot, bring 4 quarts of water to a rolling boil. Add 1 tablespoon of salt.

    Cook Ziti

    Add the ziti pasta to the boiling water and cook according to package instructions, usually about 8-10 minutes until al dente. Drain the pasta and set aside.

Making the Sauce

    In the same skillet used for the chicken, add 2 tablespoons of olive oil and sauté the minced garlic for about 1 minute until fragrant.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, Italian seasoning, sugar, salt, and pepper to the skillet. Stir to combine and let simmer for about 10 minutes.

    Combine Sauce and Basil

    Stir in the chopped fresh basil and remove from heat.

Assembling the Dish

    In a large baking dish, spread half of the sauce on the bottom. Add the cooked ziti, followed by the fried chicken breasts, and then top with the remaining sauce. Finally, sprinkle shredded mozzarella cheese on top.

    Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is bubbly and golden.

    Remove from oven and let it cool for a few minutes. Serve hot, garnished with extra basil if desired.
