For the Chicken Gyro

    Marinate the Chicken

    In a bowl, combine the boneless, skinless chicken thighs, olive oil, minced garlic, dried oregano, paprika, salt, and black pepper. Mix well to ensure the chicken is coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.

    Cook the Chicken

    Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Remove from heat and let rest for 5 minutes before slicing.

    Prepare the Pita

    Warm the pita bread on the grill or in the oven for a minute or until soft and pliable.

For the Tzatziki Sauce

    Mix Ingredients

    In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Stir well until all ingredients are thoroughly mixed. Refrigerate for at least 30 minutes to allow the flavors to meld.

    Wash and shred the lettuce, dice the tomato, and thinly slice the red onion. Set aside.

For the Fries

    Prepare the Fries

    Preheat the oven to 220°C (425°F). Toss the cut potatoes with olive oil, salt, and black pepper. Spread them out on a baking sheet in a single layer.

    Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy, flipping halfway through.

Assembling the Gyro

    Slice the cooked chicken into strips. Take a warm pita and layer with shredded lettuce, diced tomato, sliced onion, and sliced chicken. Drizzle with tzatziki sauce before folding the pita in half.
