Chicken Cutlets Preparation

Prepare the Chicken
Start by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound the chicken to an even thickness of about 1/2 inch.

Set Up Breading Station
Prepare three shallow dishes: one with flour seasoned with salt, pepper, and garlic powder; one with beaten eggs; and one with bread crumbs.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip in beaten eggs, and finally coat with bread crumbs. Press the crumbs onto the chicken to adhere well.

Fry the Chicken
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the breaded chicken cutlets. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Rolls
Slice the hard rolls in half horizontally. Spread about 2 tablespoons of mayonnaise on the inside of each roll.

Assemble the Sandwich
Place one fried chicken cutlet on the bottom half of each roll. Top with 2 lettuce leaves and slices of tomato. Cover with the top half of the roll.

Cook the French Fries
Prepare the frozen French fries according to package instructions, typically by baking or frying. Once cooked, sprinkle with salt to taste.
