Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

    Mix Wet Ingredients

    In another bowl, beat the oil, eggs, and vanilla extract together until smooth and well incorporated.

    Combine Mixtures

    Gradually add the wet mixture to the dry mixture, stirring until just combined. Do not overmix.

    Fold in Carrots and Nuts

    Gently fold in the grated carrots and optional chopped nuts into the batter.

    Bake the Cake

    Divide the batter evenly between the two prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

    Cool the Cakes

    Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

    Prepare the Frosting

    In a large mixing bowl, beat the softened cream cheese and unsalted butter together until creamy and smooth.

    Add Sugar and Vanilla

    Gradually add the powdered sugar, mixing until fully incorporated. Add the vanilla extract and mix until fluffy.

    Frost the Cake

    Once the cakes are completely cooled, place one layer on a serving plate and spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
