Chicken Marinade

    Marinate the Chicken

    In a bowl, combine Cajun seasoning, olive oil, and lemon juice. Add the chicken breasts and coat thoroughly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Vegetable Preparation

    Prepare the Vegetables

    Slice the red onion and bell peppers into thin strips. Clean the mushrooms and slice them as well. Set aside.

Cooking

    Grill the Chicken

    Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side until fully cooked and juices run clear. Remove from the grill and let rest for a few minutes.

    Sauté the Vegetables

    In a skillet over medium heat, add a bit of olive oil. Sauté the sliced red onion, bell peppers, and mushrooms for about 5-7 minutes or until they are tender and slightly caramelized.

    Prepare French Fries

    While the chicken and vegetables are cooking, prepare the French fries according to package instructions or fry fresh potatoes until golden and crispy.

    Assemble the Melt

    Slice the grilled chicken into strips. Lay the pita bread on a clean surface, add the chicken, sautéed vegetables, and top with shredded cheddar cheese. Place the assembled pita melts on the grill or a pan for about 2 minutes until the cheese is melted and the bread is warm.
