Chicken Marinade

Method

Prepare the Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, salt, and black pepper. Mix well. Add the halved chicken to the bowl, ensuring it is well-coated with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

  2. 2

    Preheat the Broiler

Preheat your broiler to high heat. This should take about 10 minutes.

Broil the Chicken

  1. 3

    Prepare for Broiling

Line a baking sheet with aluminum foil for easy cleanup. Place a wire rack on top of the baking sheet and arrange the marinated chicken halves skin-side up on the rack.

  2. 4

    Broil the Chicken

Place the baking sheet under the broiler. Broil the chicken for about 20-25 minutes, or until the skin is crispy and the internal temperature reaches 165°F (75°C). Baste with any leftover marinade halfway through the cooking time.

Prepare Side Dishes

  1. 5

    Cook the Potato

Prepare your chosen potato dish. If baking, preheat the oven to 400°F (200°C) and bake for 45 minutes. If mashing, boil potatoes until tender, then mash with butter, milk, salt, and pepper to taste. If frying, slice potatoes and fry in hot oil until golden brown.

  2. 6

    Cook the Vegetable

Steam or sauté your chosen vegetable until tender, about 5-7 minutes. Season with salt and pepper to taste.

  3. 7

    Prepare Soup or Salad

If serving soup, heat it in a pot until warmed through. For salad, wash and chop your preferred salad ingredients and toss them in a bowl.

Serve

  1. 8

    Plate the Dish

Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. Plate the chicken alongside your chosen potato, vegetable, and either soup or salad.

  2. 9

    Enjoy

Serve warm and enjoy your delicious broiled chicken with sides!
