Dough Preparation

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour, instant yeast, granulated sugar, and salt. Whisk together until well combined.

Add Wet Ingredients
Add warm water and honey to the dry ingredients. Mix with a wooden spoon until a shaggy dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shaping and Boiling

Shape the Bagels
Once the dough has risen, punch it down to release air. Divide the dough into 8 equal pieces. Roll each piece into a ball and then use your finger to poke a hole through the center, stretching it to form a bagel shape.

Boil the Bagels
In a large pot, bring 10 cups of water to a boil. Add baking soda. Carefully drop the bagels into the boiling water, 2-3 at a time, and boil for 1 minute on each side. Remove with a slotted spoon and place on a baking sheet lined with parchment paper.

Preheat Oven
Preheat your oven to 425°F (220°C).

Add Toppings
If desired, sprinkle sesame seeds, poppy seeds, and coarse salt on top of the bagels before baking.

Bake the Bagels
Bake the bagels in the preheated oven for 20-25 minutes or until golden brown. Rotate the baking sheet halfway through for even baking.

Once baked, remove the bagels from the oven and let them cool on a wire rack for at least 10 minutes before serving.
