For the Pasta Dough

Make the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs using a fork until fully incorporated. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Prepare the Filling

In a medium bowl, combine the lobster meat, shrimp, scallops, ricotta cheese, parsley, salt, and black pepper. Mix well until combined and set aside.

For the Vodka Sauce

Make the Vodka Sauce

In a large saucepan, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Stir in crushed tomatoes and vodka, and simmer for 5 minutes. Add heavy cream, salt, pepper, and Parmesan cheese. Stir until well combined and let simmer for an additional 5-10 minutes until the sauce thickens.

Roll and Cut the Dough

After the dough has rested, divide it into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin. Place a teaspoon of filling about 1 inch apart on one sheet. Moisten the edges with water, then place another sheet on top and press down to seal.

Cook the Ravioli

In a large pot, bring salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes until they float to the surface. Remove with a slotted spoon and place on a plate.

Serve

In a serving dish, pour a layer of the vodka sauce, then place the cooked ravioli on top. Garnish with the chopped shrimp, scallops, and parsley. Serve immediately.
