1. Preheat the Oven
Preheat your oven to 350°F (175°C).
2. Sauté the Vegetables
In a large oven-safe skillet, heat olive oil over medium heat. Add the mushrooms and red bell pepper, sauté for about 3-4 minutes until softened. Stir in the spinach and cook until wilted.
3. Prepare the Egg Mixture
In a bowl, whisk together the eggs, salt, and black pepper until well combined.
4. Combine and Cook
Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle the grated asiago cheese on top and let it cook for about 2-3 minutes on the stovetop until the edges start to set.
5. Bake the Frittata
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
6. Serve
Remove from the oven, let it cool for a few minutes, then slice and serve warm. Enjoy!
