Make the Waffle Batter
In a large mixing bowl, whisk together the whole wheat flour, baking powder, and salt. In another bowl, beat the eggs, then add the milk, vanilla extract, and melted coconut oil. Combine the wet ingredients with the dry ingredients and mix until just combined.

Preheat the Waffle Iron
Preheat your waffle iron according to the manufacturer's instructions.

Cook the Waffles
Pour the batter into the preheated waffle iron, using about 1/2 cup of batter for each waffle. Cook according to the manufacturer's instructions until golden brown and crispy.

Prepare the Toppings
While the waffles are cooking, prepare your toppings by slicing the banana and washing the seasonal berries.

Assemble the Waffles
Once the waffles are cooked, top each waffle with a dollop of vanilla Greek yogurt, a generous portion of seasonal berries, sliced banana, and sprinkle with Fresco granola.
